Taiwanese Danzai Noodles

Authentic Taiwanese cuisine with childhood memory and mom's love .



I would say it's not a easy year for everyone, including me, but we can still create precious memory on every extraordinary day. This year, I turned 30 years old. Instead of having a feast in a decent restaurant, I cooked Danzi Noodle, which is my mom's favorite cuisine, by myself to thank her for bringing my to this world.


Recipe of Danzi Noodle

Boiled pig bones and shrimp into a fresh and sweet soup. Simple but bring warm and happiness.

(Servings for four)

  • Shrimp Prawns - 4

  • Ground Pork - 250g

  • Onion - 1/4

  • Rice Wine - 40ml

  • Water - 100ml

  • Soy sauce - 40ml

  • Oyster sauce - 20ml

  • granulated sugar - 20g

  • Wu-xiang spice - 20g

  • Pork bone broth - 600ml

  • Sesame oil - 40ml

  • Shallots - 20g

  • Salt - 10g

  • Chinese noodle (oil noodles) - 400g

  • Garlic - 4 capsules

  • Coriander - appropriate amount

  • Bean sprout - 100g


Step by Step


1. Slice onion into dice-sized pieces.

2. Slice shallots into slices.

3. Peel the shrimps. (Keep the shrimp shells)

4. Mash garlic.

5. Turn on medium heat and pour in the proper amount of oil.

6. Add the shallots and stir fry to get the aroma.

7. Add the shrimp shells and stir fry to get the aroma.(Shrimp shell is easy to burn, can adjust to low heat.)

I love cooking ! I can completely understand people who prefer cooking for an special event than going to the restaurant. This meal looks so good, I didn't have a lot of opportunities to try Taiwanese dishes but I will be very happy to make it one day ! I keep this recipe with me !
